Chef Peter Park is beloved in Hollywood for his purist’s approach to food and dining. With meticulously sourced seasonal ingredients, he creates delicate parcels of flavour that put the ‘art’ in culinary arts — served at a nondescript location for an LA clientele who want to enjoy quality seafood without being seen. It helps that photos are verboten inside.
With the launch of a second omakase at the Saint Laurent boutique in Paris, he indulges his stylish side. The underground Sushi Park bar and dining room is both traditional and modern, with an exacting minimalism engineered in dark wood, waxed concrete and steel. Lighting is subtle — recessed and paper-thin, with one diaphanous pendant running the length of the bar.
Park and Saint Laurent designer Anthony Vaccarello collaborated with ceramicist Daeyong Kim on a limited run of tableware for the space. Glazed in matt ochres and black with distinctive imperfections, they’re like pedestals for the sculptural food. The handcrafted pieces are stamped on the bottom with the names of the designer, chef and ceramicist and are available at the Rive Droite boutique.
Seating is limited in the Saint-Honoré space and available for two evening seatings, Tuesday through Saturday. Booking early is recommended.
