Less is more at new Melbourne haunt Hazel, designed by The Stella Collective as a soothing, understated space that puts all the emphasis on the food.

The outpost is the latest venture from restauranteur Nathan Toleman of The Mulberry Group, who tasked the studio with creating minimalist interiors that will stand the test of time.

After rewinding the unwanted additions to the 100-year old building from its previous life as offices, studio principal Hana Hakam drew on ‘glory days of 70’s understated glamour’ for Hazel’s look.

Bare windows and white walls amplify the feeling of natural light inside the Melbourne restaurant, while artificial sources – scalloped gold sconces, and pearl-bulbs chandeliers with glass flutes – add a touch of decadence.

The 1970s design vibe continues with muted colour pops – think mossy green tiles and sandy coloured banquette seating, with rich red brickwork exposed here and there. Maximalist flourishes come in the form of antique French mirrors and frond-covered wallpaper by Cole and Sons.
