From convent to culinary hub: the Oaxaca Gastronomic Center opens in a former nunnery

RootStudio has transformed a former convent in the heart of Oaxaca into a multipurpose space with kitchens, gardens and a food hall dedicated to the state’s cuisine.

The studio was charged with restoring the 16th-century building while preserving its original architecture, and as such, drew on traditional techniques and materials, including lime, brick and wood.

During the convent’s adaptive reuse, RootStudio uncovered walled-over windows, polished up frescoes, and delved into a lost sewer – repurposed as a dining space and mezcal tasting room.

Steel frameworks support the building’s exposed brickwork and vaulted rooms and extend to create commercial areas and event spaces. Local makers contributed bespoke rosewood furniture to The Centre, while murals made by Damián Flores and Sabino Guisu connect with Mexico’s food heritage.

The Center is home to 12 different food stalls, serving traditional dishes from across the Mexican state and a cooking school and bar serving mezcal cocktails and fruity shaved ice desserts.
