Set designer Alexandre de Betak has recreated fashion’s favourite restaurant, Caviar Kaspia in New York, to mark the Parisian eatery’s 90th anniversary.

Opening today, the pop-up restaurant takes over coworking space Spring Place’s Sunken Living Room for its three month run, culminating with New York Fashion week in February.

‘I wanted to share the unique, timeless and old-fashioned feeling of Kaspia, with this warm, elegant and un-designed space, adding the twist of a mirrored ceiling to double the experience,’ says de Betak.

His practice Bureau Betak has created elaborate show sets for fashion’s big hitters, including Dior and Roberto Cavalli. At Spring Place, he’s applied the same precision to Caviar Kaspia’s double. The original’s pre-revolutionary interiors have been faithfully replicated, from wallpaper and curtains down to knives and forks.

So too has the menu: diners can tuck into signature dishes, including its famous baked potato with caviar.

Spring Place – which is adjacent to Spring Studios – will also host runway shows during fashion week. The 140,000 sq ft mixed-use hub is sited in a 1920s former telephone exchange building in TriBeCa, and also houses an events space, gallery, photo studio and workspace member’s club.
